PRE-ORDER HOLIDAY PROTEINS
Hello Chimacum Corner Community!
A wave of winter has crash landed on the shores of the Salish Sea. First frost came in with a resounding 360 windmill dunk. As farmers raced to protect crops with row cover, fishing folk returned from northerly climes with coolers full of salmon, black cod, and more. The snappy, brisk mornings have us dreaming of cauldrons full of bubbling, warming soups and stews, and nights spent amongst friends in low light. After a brilliant October Hunter’s Moon, the Beaver Moon resolves itself to quietly building its lodge in the night sky. We are quietly building out our own plans for the holiday seasons ahead. A big part of that plan is providing high quality proteins for the community. In addition to standard protein #1 (turkey), we are taking pre-orders for alternative, indie-rock proteins for the holiday season. Consider a SpringRain Duck or Katfish Sockeye Salmon this season, and keep it local this holiday stretch! Turnip is rooting for ya!
This holiday season we’re thrilled to be offering up our most diverse selection of proteins for pre-order than ever before!
We’ve got two great turkey options for those looking to wow their guests by perfecting their poultry roasting techniques. Or if you’re looking to decolonize your dish, or would rather nosh on a local specialty, then boy do we have options! (Turkey, Duck, Salmon, Roast Beef, and Honey Ham to be exact.) Peruse our full protein pre-order menu and be sure to place your order soon! Some items will be limited. Reserving your proteins in advance gains you access to a discounted per/lbs pricing that is not available off the shelves!
Mushaboom
Nothing smacks of fall more than lighting out for your favorite mushroom hunting spot and returning home with a basket laden with wild-foraged goodies. The Produce Porch is a mirror of that cornucopia taking place in the woods. In addition to locally wild-foraged chanterelles, we’ve brought in a bevy of unusual and delicious fungi for all you foodies to play with. In addition to Trumpet Royales, we’ve got Elm Oysters, King Trumpet, Lionsmane, Coral, Shiitake, and even a mixed Chef Sampler! Sharpen your culinary mushroom skills at home before heading out to the Olympic Peninsula Fungi Fest in Port Angeles this weekend. Tons of learning and hands on skill building to be had at this hallowed event that happens every fall. May we all give thanks for the fungus amongus!
We Are The Champignon’s My Friend
In tandem with the bevy of mushrooms on the Produce Porch, the Corner Kitchen has a little fungi fun up their sleeves as well. Introducing the new seasonal mushroom mini quiche! Gruyere is caught cavorting with shiitakes amidst thyme and roasted red onion. What fun! This is a special limited seasonal run, so if you see it, snag it!
Huey, Dewey & Stew-Y
Fall is all about cooking up large batches of soups and stews. We have an excellent selection of inputs for all your stewing needs. For chunks of protein, we have local heroes Westbrook Angus providing high quality stew meat and osso bucco, or cross-cut veal shank. Did you know that osso bucco translates to “bone with a hole”? It’s the marrow that makes the dish. We couldn’t agree more, which is why we have a whole slough of bone broth items to thicken any soup or stew. Bonafide, both chicken and beef make a hearty addition to your stew-y? Finally, we have a shelf stable grass-fed beef bone broth from Bare Bones if you don’t have time to defrost. So, there’s no excuse not to infuse your next soup or stew with a premier source of life-sustaining collagen and other nutrients. And after your mirepoix has sauteed to buttery perfection, deglaze that pan with a nice stout. Right now we highly recommend the Fort George Brewing, Tide Land Stout.
Northwest Natives
Don’t sleep on picking up some northwest native plants before the Nursery goes dormant in November! Katy and Phil have made it a core mission of the Nursery to offer affordable seedlings of beneficial natives to the community to help replant our biome. From 4” kinnickinnick plants to gorgeous Alaskan yellow cedars, we’ve got a little something for everyone. And right now we are offering 25% OFF on native plants. In addition to our sale at CCF, there are also some other great native plant sales happening in our area. The Kul Kah Han Native Plant Garden Sale is happening this Saturday October 18th at HJ Carroll Park. Also, the Jefferson County Conservation District has their annual bare-root bundle sale going on through November 21st. Put in an order from their extensive list of native plants and pick up in late February at the Fairgrounds in PT. Their sale is unique in that they offer small (5-10 unit) bundles for home projects and large (100 unit) bundles that can replant larger areas. There are so many folks in our community with extensive knowledge of native plants and habitat, take advantage of it y’all!

Crispy Crunchies
There’s always that last bit of soup or stew at the bottom of the bowl that cries out for an edible utensil. Fortunately for all you pot-tenders out there, we have some delectable deals on crackers this month to scoop up your soups. For example, Patagonia Provisions has a toasted cheeze and a sourdough sea salt cracker that both offer a discount of nearly three dollars. We also have the classic standard, Milton’s, on sale for three dollars a box. Now that’s a steal! Pair your new cracker obsession with some great cheeses as well, which all also have a solid discount on them through 10/28. The crisp crackle of crackers is in the air!
