Happy Spooky Season Y’all! The mist is gathering ever thicker in the valleys, and the trees are in full fall regalia on the highways and byways. Turnip couldn’t decide which costume to wear this year, so she seized on the abundance of halloween festivities and went with both her skeleton costume and her turkey costume! Ever the planner, she wants to know what your plans are for upcoming holiday feasts. She beseeches you to take advantage of the Holiday Protein Pre-order system this year, which gains you access to discounts per pound that aren’t available off the shelf! First of all, we have some excellent turkey options this year. The classic standard is Mary’s Organic Turkeys. At $5.49 per lb, they are the most affordable holiday protein option from the Corner on a per pound basis. They also have the greatest range of size options. They are also the only protein that is being offered in a non-frozen state. Finally, they are raised humanely and on a certified organic diet.
For a more indie, regenerative option, we have (new this year) turkeys from Tailfeather Farm in Walla Walla! These guys are truly pasture raised and fed locally milled Palouse grains. They have one solid size range, 16-20 pounds. $9.99 per lb.
For the true bio-regionally appropriate option, we have plenty of Sockeye Salmon Sides available from Katfish Salmon Co. Fished in Bristol Bay on boats no longer than 32 feet and crews of 3-4, these bad boys are fully traceable from bay to table. Clocking in at 1-1.25 pounds per side, they take significantly less oven time than a turkey, but look just as gorgeous on the platter.
If keeping it as local as possible is your top priority, look no further than a whole Duck from Spring Rain Farm, or a Boneless Beef Roast from West Brook Angus! Both proteins raised to the highest standards right here in Chimacum. A duck will run you much less than a turkey, and still plate up beautifully for a smaller group gathering. Ditto the Beef Roast, and there is something so comforting and hearty about a melt in your mouth slow-roasted chuck. Ducks weigh in around 5-6 pounds, and the Beef Roasts around 3 pounds. Keep it local (and regal) with these fabulous options for holiday proteins.
Last but not least, if you are in the mood for pork, we have you covered with a Hempler’s Honey Ham! Honey Hams are fully cooked/cured and smoked over natural hardwoods, and sweetened exclusively with organic honey and brown sugar. And leftover Honey Ham is extremely versatile, ripe for quiches and sandwiches alike.

Katfish Salmon Co. Sockeye Salmon Sides ($15.99/lb) These fish are sourced from Western Alaska’s Bristol Bay Sockeye Salmon fishery. These fish come from the largest run of wild sockeye salmon in the world and are caught by fishermen in boats no longer than 32 ft and small 3-4 person crews. Fully traceable from fish to table. These make an absolutely stunning centerpiece, roasted in the oven with some lemon slices and parsley scattered on the top. And, with less than half an hour of oven time required, you won't have to juggle the pies, potatoes, veggie roasts, bread, and everything else to make room!

Tailfeather Farm Turkey ($9.99/lb) Truly pasture-raised turkeys from Walla Walla, WA. Support a small farm using regenerative farming practices where the birds are rotated continually onto fresh valley pastures and fed locally milled Palouse grains. Providing the best turkey lives possible. These beautiful birds are coming to the Olympic Peninsula, via a great regional food hub network hop! Traveling from producers in Walla Walla, to LINC Foods in Spokane, then to Puget Sound Food Hub in Mount Vernon, who will complete their final leg the journey here to us on the Corner! Pretty cool huh?!

SpringRain Farm Whole Duck* ($9.99/lb) As LOCAL as it gets! Pasture-raised White Pekin Duck, grown and harvested right down the road here in Chimacum. SpringRain has chosen this specific variety of duck, a French Grimaud hybrid, because of their ability to thrive in an entirely pasture-based system. They are also fed a certified organic grains mix from In-Seasons Farm and all the grass and bugs they find in the apple orchard they live in.
