Late summer spurs an immediacy to getting out into the back country. Already we can sense the fading of the light, and our pull to harvest the fun and pleasure of summer goads us forward. For an outdoorsperson, the Peninsula is a pure playground. The Olympics are the representative facet of our place, the only part that captures the whole. The Chimacum Corner Farmstand tends to function like a sort of pack outfitter at this time of year. It’s a hub for traveling souls. So before you go deep into the woods and up to the tarns and crags, let us toss a little ballast into your backpack. Only the finest and most thoughtful of edible ballasts though, don’t you worry.
Tonnemaker-a-go-go
While a tree-ripened one-touch Peach from Tonnemaker Hill might not hold up in the satchel, we have three brand new crops that landed this week from our premier fruit growers that would make for a resolute pack-out. Everybody loves donuts, so why not haul some Sweet Cap white donut peaches to dazzle your buds at breakfast number one on the trip? For the daytrippers, a tote full of green Interlaken grapes would surely quench the dusty traveler’s thirst. We are also incredibly excited to usher in the first of the New Crop apples this year, with the “Premier” varietal of Honeycrisp among them! Apples have to be amongst the best pack out snacks in the fruit world, especially given our locale. Whether you’re a Honeycrisp gal or a Wynoochee lady, we got early apples y’all!

Brews for the Backpack
It’s important to stay equal parts hydrated and dehydrated whilst traveling through nature. We’d like to highlight some premier picks for cans to haul in your pack. First up is Timber Ginger (formerly Timber City), a ginger beer brewing operation from Seattle whose parent company is actually Georgetown Brewing Co. (acquired in 2024). These are two solid Seattle companies that are producing both non-alcoholic and alcoholic varieties of ginger beer. By far one of our best selling alcoholic beverages is their 16oz Imperial Ginger ginger beer. For N/A ginger beer, they offer three flavors: blackberry, strawberry lemon, and original. We make them available as singles and in their 4 pack case format. Up next, we have local legend Shaelee Evans’ Salish Seltzer line from her company Goodness Tea Farm. She brings her grounding in herbalism and permaculture to the table on the flavor palette of these wildcrafted seltzers. Flavors like Douglas Fir and Aronia Rose are rooted in our place and taste delicious. Finally, for all the hop heads out there we have our line of beers from No Boat Brewing out of Snoqualmie. They have gained a Chimacum following for their delightful can art and exceptional brewing recipes. Our current offerings include two exceptional pilsners, “Statue World” (a west coast pils) and “How Green Was My Kiwi” (a new zealand style), as well as an IPA recipe designed for the founder’s wedding (“Spending Time”), “Bia Hoi,” which is their hallowed Vietnamese Rice Lager, and finally, “Alita,” a Vienna Lager with the most handsome Wood Duck you ever did see on a crisp white background. Check out all of these bubbly things the next time you make it around to the Corner!
Oats for the Overnighter
When backpacking, there is often an urgency to breakfast that doesn’t allow for extended preparation. Fortunately for the hustling resolute trailfolks, the Corner Kitchen has an epic recipe for overnight oats that features the legendary Tonnemaker Hill “Benton” strawberry. Meet the Strawberries & Cream Overnight Oats! A base of oats and chia seed pudding is infused with the Benton strawberry reduction, topped with scratch whipped cream and then dusted with a Toasted Almond Sugar. The Corner Kitchen has been on a tear with their overnight oats creations, and this varietal is no exception. It’s an amazing grab and go breakfast option! How deep can you carry it into the backcountry?
Westward Ho! New Fall Veg Starts
There is still time to get in some last successions of winter plantings y’all! We have a fabulous new seedling vendor, Westward Farm & Craft for just this purpose! Molly Fallon is in her first year with this business venture, but has deep roots in the Chimacum agricultural community, having worked for extended periods for both Finnriver and Spring Rain Farm & Orchards. She sells veggies and plant starts at the Port Townsend Farmer’s Market in addition to providing us with fabulous fall plant starts. She is offering a six-cell plug tray (as opposed to the Midori and Red Dog four-pack format) with deeper cells that allow for more leeway in planting. Scoop up a few trays of broccoli, cauliflower, swiss chard, or cabbage on your next stop to the Nursery. Support a local fledgling woman-owned farm business!
For all of those who are putting in their steps on the trail, we have some great deals on packable snacks. Dust off your spurs, the Jefferson County Fair is going down this weekend at the Jefferson County Fairgrounds! We’re super excited to be a fair sponsor and are really encouraging the community to show up and show out for the County Fair! It’s their marquee event of the year with tons of programming, like animal shows, live music, presentations and the iconic Washington State Draft Horse Pulls! The Sunday BBQ (a ticketed event) features sandwiches with local beef from Westbrook Angus and One Straw Ranch as well as smoked salmon from Smackdown Salmon, as well as corn on the cob provided by Chimacum Corner! There are People’s Choice voting categories as well for the Floral and Agricultural entries as well as many other categories. Their theme this year is “Future in Full Bloom: Celebrating our County’s Youth.” Support the local ag-inspired youth by turning out for our local Fair!
