CORNER KITCHEN MADE
Hello Chimacum Corner Community!
Since the dawn of human times, tool usage has been a hallmark of our intellect. You can tell a lot about a person or a family just by the kinds of tools they keep. For most homes, the greatest concentration of tools lies in the kitchen. It’s remarkable how many kinds of tools have been developed for cooking! Shoutout to whoever made the first whisk, that was true genius. This newsletter is devoted to the tenders of the Corner Kitchen and all of its mighty output. When things are Made Fresh Daily using Real Food, you register the nourishment differently. So whether you are a Turkey Bacon Pesto Wrapper or a Veggie Spring Roller, let’s all come together to celebrate the epic abundance of the Chimacum Corner Kitchen!
Made. Fresh. Daily.
This week we are shouting out the whole Corner Kitchen team and program. Their commitment to preparing our food day in and day out using dialed recipes from a passionate production team is one of the pillars of the Farmstand. From the fresh focaccia they bake that serves as the base of our signature sandwiches, like Meaty Italian and Veggie Tapenade, to the beautiful salads, to the infamous and prolific Spring Rolls, there is much to be proud of on the part of the Kitchen team. Don’t forget the absolutely elite baking team either! Representing in the pastry case too- Have you snagged the new Midori Kimchi Scone yet? And rumor has it the Tahini Marbled Brownie is vying for supremacy over the cult classic Rosemary Shortbread amongst the community. We will let you be the connoisseurs!
Meet Chef Mike
Now that we’ve gassed up the Kitchen team, it’s time to meet Mike, our “head chef” and Production Manager. Mike’s a real hoot, and a hard worker, having risen up through the ranks into his current role. With many years of culinary experience, he is a flavor maniac who we hope will continue to innovate recipes for the Corner Kitchen for years to come.
Learn a little more about Chef Mike:
What farm or regional animal would you be and why?
Probably a goat. I enjoy the way they scream and headbutt things.
What’s your current favorite thing (or things!) at the store?
I have been blowing through the Sasquatch Botanicals Misty Mountain Chili Oil. It is great on pretty much anything.
What do you like most about living on the peninsula?
Being surrounded with beautiful nature and the strong sense of community.
What do you like to do when you’re not at the Corner?
Spend time with my partner, Julie, and my two dogs, Vinny and Lucy. I also read a lot of Warhammer 40k books.
What brought you to the Corner?
I had been shopping at the corner for years. I saw a job posting in the newsletter at just the right time.
How has your food philosophy changed since being here?
I have been more focused on using whole foods as well as doing more plant based cooking. Always trying to keep as much flavor as I can while keeping things simple.

New Corner Kitchen Digs Update
While it might seem as though the former Farm’s Reach property has been sitting idle, much toil and effort has been going on behind the scenes. We are thrilled to announce that plans are in for permitting and we recently recieved our demo permit! Big thanks to studioSTL our architects and general contractor Brent Davis Construction for all their amazing work to keep this project moving forward. You will likely see some site fencing going up around the building in May, when we will hopefully break ground. Much work remains, but it feels like so much progress has been made! We cannot wait to move our amazing Corner Kitchen staff into their own digs designed just for them! Stay tuned for more updates!
Packable Produce
Are you too beat to mess with celeriac or peel potatoes? The Produce Porch has some quick grab-and-go options at the moment that provide wholesome snacks. They also make great pack-ables for the road and the trail. First we have the Braga Farms line of bagged nuts. Cashews, almonds, pistachios, and their Pacific Coast Blend, all of which are certified organic. Just look for the green bags! Another Cali jewel on the Produce Porch is the one pound box of Rancho Meladuco Medjool Dates. These dates were hailed by Bon Appetit as the “best on earth!” Last but not least we have just re-stocked on the Crespo-brand dried Ataulfo mango bags. Crespo is one of the few companies to pack dried Ataulfos because they are more labor-intensive, but the flavor is so worth it. We see why it is commonly known as the “honey mango”! Keep your eyes peeled for samples of this fine product out on the Porch.
Grow to Graze
The garden is the perfect place to store extra snacks. Nothing beats eating peas and beans right off the vine to stay hydrated while you toil. And we all know the merits of a vine-ripened sungold! Pack your garden full of snacks by plugging in some transplants from Midori and Red Dog farms. Another critical addition to any garden is a bed or patch of cutting greens like baby leaf lettuce, spinach, or arugula. Snag a pack of Saltwater Seeds and you can sow as you go!
SNAAX Specialists
The Grocery department has all the crunchy things a girl could ask for. From Boulder potato chips to Bjorn Qorn, there is something to go with your Made Fresh Daily creation from the Corner Kitchen. Go classic with some Barbara’s jalapeno cheese puffs, or try the new “Moonions” from Lesser Evil (crunchy organic corn rings). A bag of Chicas lime tortilla chips is the best possible utensil for a chicken curry or spring potato salad. We are the snack specialists!
Once you have your chips secured, you will need a high quality dip to ensure harmony in the universe. Fortunately, there are some solid discounts on the Little Sesame line of hummus. With bold flavors like herby jalapeno, golden garlic, and caramelized onion, plus a larger tub of plain, there is plenty to get excited about in chickpea land. Rumor has it that the Corner Kitchen is working on their own strain of hummus as well… stay tuned!
