Hello Chimacum Corner Community!

Smoke will rise from Jefferson County this weekend - from a veritable flotilla of grills charbroiling up a smorgasbord! Summer is on the plate, and while it may not be the season of total local abundance yet, there is much to get excited about at the Corner. Fortunately, local ground beef is always in season, and nourishing, mindfully raised burgers are the quintessential way to kick off summer (see below for all the ways you can “burger from here”). Farmers are fully laid out at this point, deep in the trenches of planting and reaping the first harvests of spring crops in earnest. Give your favorite farmer a hug (and maybe a burger) the next time you see them, we know they could benefit from that. And in honor of the longer days, we are slotting in for some longer nights here at the Corner. Read on to see what our new expanded Summer Hours will be!


Burgers to Behold

Ladies and Gentlemen, scrape your grill grates and ignite your burners, it is time to get down to business. Summer is all about burgers, and we keep it local around here, with some epicly high quality ground meats. First of all, we have pre-shaped patties of grass-fed ground beef from One Straw Ranch, our chief local meat and egg suppliers. That’s in addition to one pound packs of the same grind. We also have ground beef from Westbrook Angus and Flying Knucklehead Ranch, a formidable trio of local meat producers to say the least. For all the pescatarian friends out there, a great option is the Wild Alaskan Salmon Burger patties from Henry & Lisa’s, also on the DEALS sheet! And with Portabellas on the Produce Porch, there is truly a burger for all comers at the Corner. Or a dog, like an Uli’s Bratwurst or Rosemary Chicken Sausage, or a link from Charcutnovo. Load up those grill tops!


Grillable Vegetables

The Produce Porch is loaded with all the veggies that shine on the b-b-q. Just in time for the start of summer, we have our first offering of California sweet corn for the season! It’s also a perfect weekend for WA-grown grilled asparagus, Oregon-grown spring onions, Chimalow broccolini, and Oregon-grown zucchini. If you’re feeling wild, throw some early season stone fruit on the grill as well for dessert! Of course, the crown jewel of bbq desserts is an entire Black Seedless Ladybug Brand Watermelon. No one has ever been turned away from a shindig with one of those bad boys in tow. Live it up, the season of beautiful fresh fruit and veggies has begun!


Tater Town

Any Memorial Day grill-a-thon would be incomplete without Potato Salad. The Corner Kitchen makes an amazing iteration featuring red potatoes and Britt’s pickles. Described by one devout consumer as “zippy-crunchy-dilly-creamy,” our Potato Salad is dill-forward and bright, with green onions and celery finely chopped throughout. Mayonnaise, stoneground mustard, and Dijon create the base of the dressing. It’s a popular addition to many a staff member lunch, and it will be a popular addition to your holiday spread. It’s Tater-riffic!


Sunflower Sutras

In honor of the arrival of summer, we are featuring the whole collection of sunflower starts from Red Dog Farm! They range from Dwarf Red all the way to the “Mammoth” Giant, with many shades between, like the beautiful dusky “Chocolate” type and the pastel “Strawberry Blonde” (the preferred sunflower of gentlemen). The Corner ordered a bevy of extra sunnies from Red Dog to plant along the berms that line our parking lot. We look forward to watching our “Mammoth”s grow all season long. Red Dog grows far more than sunflower starts, to be sure. Check out the Nursery Greenhouse where you can find many of their cherished varieties of Asters, Stock, Strawflower, Hollyhock, and more!


Once the burgers and dogs come off the grill, you can’t just leave them hanging! Our INFRA DEALS are chock full of fine grilling accoutrements. Naked Bread organic hot dog and hamburger buns are front and center, along with BBQ sauces from Primal Kitchen, Sir Kensington mayos, and Woodstock brand Ketchup and Pickles. Summer Hours!

We are excited to announce that we are kicking off summer with expanded hours! The Chimacum Corner Farmstand will be open from 8 to 8, 7 days a week, all summer long, starting on Memorial Day. Easy to remember! We hope that by making ourselves available to the community for one hour longer each night, it’s an opportunity to still grab groceries after an extra-exhausting day in the field, at the dock, or in the shop. It’s also an opportunity for all of our resident “creatures of the night” to snag snacks and drinks on the way to evening programming. If this change in hours of operation is a boon to your life, be sure to let the evening crew at the Corner know, as they are the ones carrying the torch!
